[Recipe] Bean Bolognese

Ingredients

    • One onion, diced
    • 3 garlic cloves, minced
    • 8 oz cremini (baby bella) mushrooms, finely chopped (I use a food processor since my wife doesn't like the texture)
    • 8 oz tempeh, finely chopped
    • 1/4 tsp fennel seeds
    • 1/3 tsp red pepper flakes
    • 1 tsp oregano
    • 1.5 cups (1 can) cooked lentils
    • 28 oz (1 large can) crushed tomatoes
    • 3 tbsp tomato paste
    • 2 tbsp nutritional yeast

    Instructions

    1. heat a saute pan or skillet over medium heat
    2. water-saute onion for 4 minutes, until soft & translucent
    3. add the garlic and saute for 1 minute
    4. add mushrooms and saute for 2 minutes
    5. add tempeh and seasonings (fennel, red pepper flakes, and oregano); cook for 5 minutes
    6. add lentils, crushed tomatoes, tomato paste and nutritional yeast. simmer for 10-15 minutes until flavors are well-melded
    7. Serve over your choice of pasta (I prefer whole-wheat spaghetti, but you can use zoodles or bean pasta too)
