[Recipe] Creamy Balsamic Vinaigrette

Ingredients
- 2 cups water
- 1 cup balsamic vinegar
- 1 cup raisins
- 1 cup walnuts
- 1.5 tbsp Dijon mustard
- 4 cloves garlic, crushed
- 1 tsp thyme (but try playing around with sage or rosemary, too)
Instructions
- Toss everything in a blender, blend until smooth
- It will keep in the fridge for at least a week
Why Coach Harry Likes It
This dressing goes great on the Two Pound Salad. It's a tasty dressing for a salad that doesn't have any added oil, salt, or refined sugars. It's a great way to get some healthy fats in your diet - via the walnuts - and those same fats will help you metabolize the fat-soluble vitamins in your salad!
