[Recipe] Creamy Balsamic Vinaigrette

Ingredients

    • 2 cups water
    • 1 cup balsamic vinegar
    • 1 cup raisins
    • 1 cup walnuts
    • 1.5 tbsp Dijon mustard
    • 4 cloves garlic, crushed
    • 1 tsp thyme (but try playing around with sage or rosemary, too)

    Instructions

    1. Toss everything in a blender, blend until smooth
    2. It will keep in the fridge for at least a week

    Why Coach Harry Likes It

    This dressing goes great on the Two Pound Salad. It's a tasty dressing for a salad that doesn't have any added oil, salt, or refined sugars. It's a great way to get some healthy fats in your diet - via the walnuts - and those same fats will help you metabolize the fat-soluble vitamins in your salad!
