[Recipe] Smoky Barbecue Soy Curl Jerky

Ingredients

  • 1 8oz bag Soy Curls
  • 1/4 cup Coconut Aminos
  • 1/2 tbsp liquid smoke
  • 5 tbsp tomato paste (half of the small can)
  • 1/2 tbsp miso paste
  • 1 tsp smoked paprika
  • 1 tsp mustard powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tsp cayenne (optional)
  • 1/2 tsp ground black pepper

Instructions

  1. Rehydrate the soy curls according to the instructions (soak them in warm or hot water for 8-10 minutes - I boil water in an electric kettle and then soak)
  2. Drain the soy curls and allow them to cool
  3. Squeeze excess liquid out of soy curls - I use a dish towel and wring out a handful of curls at a time
  4. Put the soy curls in a large mixing bowl for now
  5. Mix the dry ingredients (smoked paprika thru black pepper) in a small bowl. Stir to combine and pour over the soy curls
  6. Mix the wet ingredients (coconut aminos thru miso paste) in the small bowl. Whisk well to ensure it is thoroughly mixed, especially the miso paste
  7. Pour marinade over the soy curls. Massage well with your hands to incorporate the marinade in each curl
  8. Spread seasoned soy curls on evenly on dehydrator trays
  9. Dehydrate at 160F for 1 hour and then lower the temperature to 130F for 2.5 hours.
  10. Keep the finished product in the refrigerator for a few days up to a week.

Why Coach Harry Likes Them

I’ve been making Soy Curl Jerky for a while; I introduced the idea in my exploration of how much protein we should be getting for Ultimate Masculinity and then shared my recipe for Curried Soy Curl Jerky. I’m really excited about this new iteration. With the addition of tomato and miso pastes, both of which are super umami, the jerky reaches an incredible level of savoriness. I’m also really pleased with the performance of my (relatively new) dehydrator and how it improves the texture of the jerky to be more chewy without being too crunchy or stale. In my opinion, this improved recipe and the use of the dehydrator are massive improvements over the original recipe, which was still pretty good.
