[Recipe] Hummus & Vegetable Sandwich

Ingredients

    • hummus (find a recipe here)
    • whole-grain bread, like Ezekiel bread from Food for Life
    • 1/4 of a pepper, sliced
    • 4 slices of cucumber
    • salt-free mustard
    • water-sauteed mushrooms
    • sprouts (optional)
    • thin-sliced red onion (optional)

    Instructions

    1. Toast your bread to your liking
    2. Spread 1-2 tbsp of the hummus
    3. lay in your cucumber
    4. put a squirt of mustard on the cucumber slices, this will be like a "glue" for the red pepper
    5. lay the red pepper on the mustard
    6. top it with your mushrooms and optional sprouts and red onion
