[Recipe] Hummus & Vegetable Sandwich

Ingredients
- hummus (find a recipe here)
- whole-grain bread, like Ezekiel bread from Food for Life
- 1/4 of a pepper, sliced
- 4 slices of cucumber
- salt-free mustard
- water-sauteed mushrooms
- sprouts (optional)
- thin-sliced red onion (optional)
Instructions
- Toast your bread to your liking
- Spread 1-2 tbsp of the hummus
- lay in your cucumber
- put a squirt of mustard on the cucumber slices, this will be like a "glue" for the red pepper
- lay the red pepper on the mustard
- top it with your mushrooms and optional sprouts and red onion
